I am trussing a Thanksgiving turkey ready for the rotisserie on my brand new gorgeous DCS by Fisher and Paykel grill. Yes the outdoor kitchen is finally operational – woo hoo – thanks to Toby and his brilliant team – I’m now cooking with gas!
This technique is useful all year round – for chickens, ducks, geese – and you don’t have to rotisserie them – roasting post trussing is another way to get that picture perfect bird.
